Grounding Creamy Soup
Warming, comforting and full of flavour, this Creamy Soup is the perfect autumnal recipe to bring some grounding and cosiness in this Vata Season.
Ingredients
1 onion
1 garlic clove
Half big beetroot
2 medium carrots
1 teaspoon ground ginger (also can be used fresh)
1 teaspoon ground turmeric (could be also fresh)
1 teaspoon Ground cumin or seeds
Big pinch of salt and black pepper
1 can of coconut milk full fat
Sesame or coconut oil
Fresh parsley and/or coriander
Method
1.Roast the veggies in the oven with oil, salt and pepper (to let them release all their sweetness and flavour) until they're golden.flavours
2.In a pan, add the chopped garlic, fresh ginger, and turmeric, then add the cumin seeds to toast a little bit.
3.Add the roasted veggies to the pan and mix all together for a couple of minutes to get all the flavours together, put all in a pot with the coconut milk and add more salt, pepper or spices grounded if needed.
4.Cook the veggies on low fire for just around 3/5 min as they are already cooked, and blend the mix.
5.Add water if necessary, depending on the texture you prefer. If you like, chop fresh herbs and add them at the last moment.
6.,You can decorate it with sesame seeds, a bit of coconut milk and herbs, Enjoy it!
