From Baby Food to Breakfast Favourite – My Go-To Creamy Porridge
Porridge is often seen as baby food – even though, I didn’t grow up eating it much. But once my daughters were born and I started making it for them, it slowly became one of my absolute favourite breakfasts.
Not only is oats incredibly nutritious – full of fibre, good carbs and a great source of slow-releasing energy – but it also keeps you full for ages.
And if you’re picturing a bland, soggy bowl of mush… let me stop you right there. With a few simple tricks (and toppings!), porridge becomes a creamy, comforting, naturally sweet breakfast that feels like a warm hug.
Ever since I saw Jamie Oliver using water instead of milk in his porridge, I’ve been hooked on that method. I promise, it’s still perfectly creamy! But of course, you can use plant-based or dairy milk if you prefer.
The secret? Cooking the fruit first. And then? Go wild with the toppings. I love adding hemp seeds and almond butter (hello, extra protein!), coconut flakes, goji berries, or some chopped fresh fruit.
My Cosy Morning Porridge
(Perfect for babies, kids and grown-ups!)
You’ll need:
1 part oats to 3 parts water (or milk if you prefer)
1 banana, chopped
1 apple, chopped or grated
A sprinkle of cinnamon
How to make it:
Start by gently simmering the banana and apple in a splash of water, just for a few minutes to soften them.
Add the oats and water (or milk) and cook on low heat, stirring often so it doesn’t stick.
Sprinkle in some cinnamon and keep stirring until creamy.
Add your favourite toppings – and enjoy!
Why I love it:
Starting with the fruit makes everything naturally sweeter and creamier, so there’s no need to add sugar at all. And if you’re short on time in the morning, make a bigger batch and keep it in the fridge – just stir in a splash of milk before reheating and it’ll taste fresh again.
This porridge is a regular in our home – easy, nourishing and always a hit with the kids (and me!).
